Accessing edit form fields

I'm wondering if theres a way to remove characters from a form edit field before the form is created. I know theres onInitializeForm , but i'm not sure how to use it.
I have a field which contains a dollar sign e.g. $4.29 (added by php), but I want to strip the $ from the edit form when it is displayed, so they will only see 4.29.
